Ingredients

Serves 6-8:

  • 4 1/2 oz confectioners' sugar

  • 5 1/2 oz almond powder

  • 5 1/2 oz melted butter

  • 3 eggs + 3 whites

  • 8 oz walnuts

  • 2 oz sugared almonds

Sweetened pastry dough:

  • 8 1/2 oz flour

  • 4 1/2 oz melted butter

  • 2 2/3 oz confectioners' sugar

  • 2 2/3 oz almond powder

  • 1 small egg

  • 1 pinch salt


Method:

  1. Prepare the dough: mix the flour together with the butter, confectioners' sugar, almond powder, egg and salt. Form into a loaf and allow it to rest for 2 hours. Roll out the dough and line a tart pan with it.

  2. Preheat the oven to 350°F/180°C.

  3. In a bowl, mix 3 1/2 oz of confectioners' sugar and the almond powder. Combine with the butter, cut into slices, and the eggs. Add the walnuts, chopped coarsely, setting aside a few nuts for decoration. Finally add the sugared almonds. Mix well.

  4. Whisk the whites to stiff peaks, beating in 1 oz of confectioners' sugar to bind them. Fold into the mixture. Pour the batter into the tart shell and bake for 30 minutes.

  5. Before serving dust with the remaining confectioners' sugar and sprinkle with the remaining walnuts.
