Cakes and Pastries Recipes - Vanilla Sauce and Nutmeg Tart Recipe

Ingredients

Serves 4:

  • 8 1/2 oz (250g) sweetened pastry dough (refer recipe)

  • 1/3 oz butter

  • 1/2 tsp grated nutmeg

Vanilla cream:

  • 6 egg yolks

  • 2 1/3 oz sugar

  • 1/2 tsp vanilla extract

  • 2 cups heavy cream


Method:

  1. Prepare the vanilla sauce: combine the yolks, sugar and vanilla. Bring the cream to a boil over low heat.

  2. Pour in the egg-sugar mixture, Stirring all the time. Stir until the mixture has cooled. Strain.

  3. Preheat the oven to 350°F/180°C.

  4. Roll out the dough and line a greased tart pan with it. Prick the base with a fork. Pour in the vanilla sauce. Dust with grated nutmeg. bake for about 40 minutes.

  5. Cool before turning out.
