Nutmeg Tart

Ingredients
Serves 4:
Vanilla cream:

6 egg yolks
-
2 1/3 oz sugar
-
1/2 tsp vanilla
extract

2 cups heavy cream
Method:

Prepare the
vanilla sauce: combine the yolks, sugar and
vanilla. Bring the cream to a boil over low
heat.

Pour in the
egg-sugar mixture, Stirring all the time. Stir
until the mixture has cooled. Strain.

Preheat the oven
to 350°F/180°C.

Roll out the dough
and line a greased tart pan with it. Prick the
base with a fork. Pour in the vanilla sauce.
Dust with grated nutmeg. bake for about 40
minutes.

Cool before
turning out.
