Ingredients

Serves 6:

  • 6 eggs

  • 8 1/2 oz sugar

  • zest of 1 orange

  • 2 tsp orange blossom water

  • 2 1/4 lb/1kg ricotta cheese

  • 8 1/2 oz pie crust dough (refer recipe)

  •  1/3 oz butter


Method:

  1. Preheat the oven to 350°F/180°C.

  2. Blend the eggs and the sugar. Add the orange zest and orange blossom water.

  3. Incorporate the ricotta cheese, folding it in thoroughly.

  4. Line a greased tart pan. Fill with the cheese mixture. Bake for about 20 minutes; the tart is done when the top is golden brown.
