Ingredients
Serves 6:

6 eggs
-
8 1/2 oz sugar
-
zest of 1 orange
-
2 tsp orange
blossom water
-
2 1/4 lb/1kg
ricotta cheese
-
8 1/2 oz pie crust
dough (refer recipe)

1/3 oz
butter
Method:
-
Preheat the oven
to 350°F/180°C.
-
Blend the eggs and
the sugar. Add the orange zest and orange
blossom water.
-
Incorporate the ricotta cheese,
folding it in thoroughly.
-
Line a greased
tart pan. Fill with the cheese mixture. Bake for
about 20 minutes; the tart is done when the top
is golden brown.
