Cakes and Pastries Recipes - Rhubarb Tart with Raspberry Sauce Recipe

Ingredients

Serves 6:

  • 10 oz (280g) sweetened pastry dough (refer recipe)

  • 1 1/8 lb (500 g) rhubarb stalks

  • 2 eggs

  • 7 1/4 oz (200g) sugar

  • 1 tbsp cornstarch

  • 1 cup raspberry sauce (refer recipe)


Method:

  1. Preheat the oven to 430°F/220°C.

  2. Roll out the dough and line a 10 1/3 inch (26 cm) tart pan; pinch the edges of the dough. Bake blind for 10 min.

  3. Cut the rhubarb into pieces. Blanche for 2 min. Drain.

  4. Beat the eggs, sugar, and cornstarch and mix with the rhubarb. Pour this mixture into the tart crust Bake for 20 min.

  5. Turn out and cool. Serve with the sauce.
