with Raspberry Sauce

Ingredients
Serves 6:
-
10 oz (280g) sweetened
pastry dough (refer recipe)

1 1/8 lb (500 g) rhubarb
stalks
-
2 eggs
-
7 1/4 oz (200g) sugar
-
1 tbsp cornstarch
-
1 cup raspberry
sauce (refer recipe)
Method:
-
Preheat the oven to 430°F/220°C.
-
Roll out the dough
and line a 10 1/3 inch (26 cm) tart pan; pinch the edges
of the dough. Bake blind for 10 min.

Cut the rhubarb
into pieces. Blanche for 2 min. Drain.
-
Beat the eggs,
sugar, and cornstarch and mix with the rhubarb. Pour
this mixture into the tart crust Bake for 20 min.

Turn out and cool. Serve with the sauce.
