Ingredients

Serves 6:

  • 1 1/2lb pumpkin

  • 1 Royal Gala apple

  • 1 orange

  • 3 oz raisins

  • 1 1/2 oz butter

  • 4 1/3 oz sugar

  • 3/4 cup (20 cl) crème fraiche

  • 3 eggs

  • 1 pinch ground cinnamon

  • 16 oz pie crust dough (refer recipe)

  • 2 tbsp flour


Method:

  1. Prepare the pumpkin puree: bake the pumpkin slices in a preheated oven at 450-460°F/230-240°C for 45 minutes.

  2. Mix the flesh. Set aside. beat the eggs until they turn light and frothy. Fold in the milk and crème fraiche, then the pumpkin puree, brown sugar, salt and spices.

  3. Roll out the dough. line a non-stick tart pan. Fill the tart with the pumpkin mixture and bake for 10 minutes.

  4. Lower the temperature to 350F-390°F/180-200°C and continue cooking for another 20 minutes.
