Ingredients
Serves 6-8:
Sweetened pastry:

4 1/2 oz softened
butter
-
2 pinches salt
-
2 level tbsp sugar
-
1 egg yolk
-
8 1/2 oz flour
Method:
-
Prepare the dough:
in a bowl, use your fingertips to mix together 4
1/3 oz of butter, cut into slices, the sugar,
and the salt. Fold in the yolk and combine well.
Add the flour and 3 tbsp of water. Combine.
Shape the dough into a ball. Cover and let it
rest for 2 hours.

Preheat the oven
to 390°F/200°C.

Prepare the
filling: in a bowl, mix the sugar with the
almond powder, then add the butter, eggs,
candied fruit, and raisins, soaked din rum.

Roll out the dough
to a thickness of 1/8 inch. Line a greased 9 1/2
inch tart pan with it. Pour the filling over the
crust. Spread using the back of a spoon, dipped
in water.

Cover with pine
nuts, Pres the pine nuts down into the filling
with a fork. Bake for 35-40 minutes.

Take the tart out
of the oven and cool completely before turning
out.
