Ingredients

Serves 4:

  • 10 oz shortbread dough (refer recipe)

  • 5 tbsp lavender honey

  • 8 1/2 oz pine nuts

  • 2 tbsp thick crème fraiche


Method:

  1. Roll out the dough. Cut out 6 equal 3 1/3 - 4 inch (8-10 cm) circles and line the greased tartlet pans with them.

  2. Preheat the oven to 350°F/180°C.

  3. Heat the honey over medium heat until it forms a light caramel.

  4. Fold in the pine nuts and continue cooking, stirring all the time. until they brown.

  5. Add the crème fraiche.

  6. Pour the filling into the tartlet crusts. Bake for 15 min.
