Ingredients
Serves 6-8:

4 pears
-
3 oz crystal sugar
-
1 packet vanilla
sugar
Sweetened pastry
dough:
-
7 1/4 oz flour
-
1/2 tsp salt
-
1 tbsp sugar
-
3 1/2 oz cold
butter
Cream cheese cream:
Method:
-
Prepare the dough:
in a bowl, in a bowl, combining the flour, salt
and sugar. Divide the butter into small pieces
with your fingers. Make a well in the center and
place the butter in it. Pour in a tablespoon of
water. Mix, pulling the flour towards the
center, to form smooth pastry dough, Knead a few
times with the palm of your hand, Let it rest
for 2 hours.

Halve the pears,
remove the stems, peel and discard the cores;
slice thinly. In a saucepan, bring to a boil 3
cups of water, adding both the sugars. Plunge in
the pear slices and poach for 10 minutes.

Preheat the oven
to 320°F/160°C.

Prepared the cream
cheese cream: blend the cream cheese with the
sugar in small bowl. One by one add the eggs and
finally the crème fraiche.

Arrange the pear
halves on the tart base, pointing towards the
center, flat sides down. Pour the cream cheese
mixture in between the pieces of fruit. Bake for
45 minutes.

Take the tart out
of the oven and cool completely before turning
out.
