Peach Tart with
Red Fruits and Pastry Cream

Ingredients
Serves 6

8 1/2 oz pie crust
dough (refer recipe)

1 oz butter
-
1 oz sugar
-
6 white-fleshed
peaches
-
3 yellow-fleshed
peaches
-
6 1/3 oz pastry
cream (refer recipe)
-
2 baskets of red
fruit mix (blackberries, blueberries, currants,
ect.)
Method:

Preheat the oven to 390F/200°C.

Roll out the
dough. Line a greased tart pan that you have dusted with
sugar. Score the side crusts with a knife and prick the
bottom with a fork. Cover with baking paper and spoon in
dried beans. Bake blind for 10 min. Discard the paper
and dried beans and bake for another 5 - 7 min.

Meanwhile, peel the peaches and halve them, removing the
pits. Cut into thin slices, separating the white-and
yellow-fleshed peaches. Set aside.

Pour the pastry
cream into the tart crust. Arrange the white peach
slices around the edges and the yellow peach slices in
the center.

Dust with the remaining sugar and dot with
the remaining butter, cut into pieces. Bake for about 20
- 25 min. Turn out on a cooling rack and allow it to
cool.

Before serving, sprinkle the tart with red
fruits.
