Ingredients
Serves 4:
Almond cream:

2 1/2 oz (70g)
soft butter
-
2 1/2 oz (70g)
confectioners' sugar

2 1/2 oz (70g)
almond powder

2 small eggs
-
1/3 oz (10g) flour
Method:

Preheat the oven to 350°F/180°C.

Peel the peaches and cut them
into quarters. Set the pits aside.

Roll out the dough and line an 8
inch (20 cm) tart pan with it. Cover with a
piece of baking paper, cover with peach pits,
and bake blind for 15
-
20 min.

Prepare the almond cream: cream
the butter and sugar, adding the almond powder,
eggs, and flour. Set aside.

Take the tart out of the oven and
let it cool.
-
Spread the almond cream over the
crust. Sprinkle with almond powder. Arrange the
peach quarters evenly over the tart. Bake for
about 1 h -1 h 30, until the cream has
solidified and the peaches have taken on a
golden color.

Meanwhile, boil the almonds for a
few seconds and peel them. Sprinkle the tart
with almonds. Cool and serve.
