Ingredients

Serves 4:

  • 4 or 5 peaches

  • 51/2 oz (150gl shortbread dough (refer recipe)

  • 3/4 oz (20g) butter

  • 1 oz (30g) almond powder

  • 24 fresh almonds

Almond cream:

  • 2 1/2 oz (70g) soft butter

  • 2 1/2 oz (70g) confectioners' sugar

  • 2 1/2 oz (70g) almond powder

  • 2 small eggs

  • 1/3 oz (10g) flour


Method:

  1. Preheat the oven to 350°F/180°C.

  2. Peel the peaches and cut them into quarters. Set the pits aside.

  3. Roll out the dough and line an 8 inch (20 cm) tart pan with it. Cover with a piece of baking paper, cover with peach pits, and bake blind for 15 - 20 min.

  4. Prepare the almond cream: cream the butter and sugar, adding the almond powder, eggs, and flour. Set aside.

  5. Take the tart out of the oven and let it cool.

  6. Spread the almond cream over the crust. Sprinkle with almond powder. Arrange the peach quarters evenly over the tart. Bake for about 1 h -1 h 30, until the cream has solidified and the peaches have taken on a golden color.

  7. Meanwhile, boil the almonds for a few seconds and peel them. Sprinkle the tart with almonds. Cool and serve.
