Cakes and Pastries Recipes - Macaroon and Almond Tartlets Recipe

Ingredients

Serves 10:

  • 1 tbsp flour

  • 8 1/2 oz puff pastry dough (refer recipe)

  • 3/4 oz butter

  • 2 eggs

  • 4 large almond macaroons

  • 2 1/3 oz crystal sugar

  • 3/4 oz almond powder

  • 45 blanched almonds

  • 2 tbsp confectioners' sugar


Method:

  1. Working on a floured countertop, roll out the dough as thin as possible, about 1/12 inch (2 mm). Grease 10 rather deep ridged tartlet pans, then flour them. Chill for at least 30 min in the refrigerator.

  2. Break the eggs into a bowl and beat until frothy. Stir in the finely crushed macaroons. Add the crystal sugar and the ground almonds. Stir.

  3. Fill the greased pans 3/4 full. Cool or refrigerate for 30 min.

  4. Preheat the oven to 390°F/200°C.

  5. Halve the almonds. Arrange 9 almond halves on each tartlet, shaping into a star. Dust with confectioners' sugar. Place the pans on a baking sheet.

  6. Bake for about 20 min. Serve the tartlets hot or cold.
