Almond Tartlets

Method:

Working on a floured countertop, roll out the dough as
thin as possible, about
1/12
inch (2 mm). Grease 10 rather deep ridged tartlet pans,
then flour them. Chill for at least 30 min in the
refrigerator.

Break the eggs into a bowl and beat until frothy. Stir
in the finely crushed macaroons. Add the crystal sugar
and the ground almonds. Stir.

Fill the greased pans 3/4 full. Cool or refrigerate for 30 min.

Preheat the oven to 390°F/200°C.

Halve the
almonds. Arrange 9 almond halves on each tartlet,
shaping into a star. Dust with confectioners' sugar.
Place the pans on a baking sheet.

Bake for about 20 min. Serve the tartlets hot or cold.
