Ingredients

  • Serves 8:

  • 19 1/2 oz (550 g) shortbread dough (refer recipe)

  • 1 tbsp confectioners' sugar

  • 1/2 oz (15g) butter

Lemon cream:

  • 8 lemons

  • 9 oz (260g) sugar

  • 3 small eggs

  • 8 1/2 oz (250g) crème fraiche

  • 3 oz (80g) butter


Method:

  1. Roll out the dough and line a 10 1/3 inch (26cm) greased tart pan with it.

  2. Carefully wash and brush the lemons. Squeeze out the juice and set it aside. Grate the zest of two of the lemons.

  3. Mix the lemon zest with the sugar, eggs, and cream. Cook in a saucepan over low heat until the mixture thickens. Add the butter and lemon juice. Stir and cool.

  4. Preheat the oven to 370°F/190°C.

  5. Fill the crust with lemon cream. Bake for 20 min.

  6. Remove the tart from oven and cool. Dust with confectioners' sugar and serve.
