Cakes and Pastries Recipes - Kiwi and Almond Cream Tart Recipe

Ingredients

Serves 4:

  • 7 kiwis

  • 8 1/2 oz (250g) pie crust dough (refer recipe)

  • 1/3 oz butter

  • 3 tbsp brown sugar

Almond cream:

  • 2 eggs

  • 1 cup crème fraiche

  • 3 oz (80g) sugar

  • 4 1/3 oz (120g) almond powder


Method:

  1. Prepare the almond cream: in a bowl; mix the eggs, crème fraiche, sugar, and almond powder. Set aside.

  2. Peel the kiwis. Cut each of 6 of the kiwis into 6 thick slices. Liquify the remaining kiwi. Add the puree to the almond cream.

  3. Preheat the oven to 410°F/210°C.

  4. Roll out the dough and line a greased tart pan with it. Prick with a fork. Pour the cream into the tart crust. Bake for 20 min.

  5. Arrange the kiwi slices on the tart, overlapping them. Dust with brown sugar. Raise the oven temperature to 460°F/240°C and continue cooking for about 5 min to allow the top to brown.
