Cakes and Pastries Recipes - Grape Juice Poached Pear Tart Recipe

Ingredients

Serves 6:

  • 4 ripe pears

  • 4 cups grape juice

  • 2 cinnamon sticks

  • 7 1/4 oz sugar

  • 8 1/2 oz pie crust dough (refer recipe)

  • 1/2 oz butter

  • 2 egg yolks

  • 3 tbsp crème fraiche


Method:

  1. Peel the pears, halve them lengthwise and remove the cores. Set aside.

  2. Heat the grape juice, cinnamon, and 3 1/2 oz of sugar in a saucepan over medium heat. When hot, plunge in the pear halves and cook for about 20 minutes.

  3. Using a skimmer, remove the pears from the syrup and dry on paper towels.

  4. Preheat the oven to 350°F/180°C.

  5. Roll out the dough and line a non-stick greased tart pan with it. Prick the base with a fork. Cover with baking paper and dried beans. Bake blind for 20 minutes.

  6. Meanwhile, in a bowl, beat the egg yolks and the remaining sugar. Beat until the mixture turns light and frothy. Add the crème fraiche ad mix again.

  7. Remove the tart crust from the oven. Discard the paper and beans. Arrange the pear halves in the crust and pour the cream over the fruit, using a soup ladle. Place back in the oven and continue baking for another 20 minutes.
