Cakes and Pastries Recipes - Fried Apple and Fig Turnovers and Citrus Butter Recipe

Ingredients

Serves 4-5

  • 5 apples

  • juice of 1 juice

  • 1 vanilla pod

  • 3 oz sugar

  • 1 oz dried figs

  • 1 1/8 lb puff pastry dough (refer recipe)

  • 4 cups cooking oil

Citrus butter:

  • 4 fl oz orange juice

  • 4 fl oz lemon juice

  • 2 tbsp confectioners' sugar

  • Zest of 1 orange

  • 5 1/2 oz butter


Method:

  1. Peel and cut the apples into quarters. Place in a saucepan, sprinkle with lemon juice, and cook and scraped vanilla pod over low heat until the mixture becomes a compote. Add 1  oz of sugar and the figs cut into pieces. Set aside.

  2. Divide the dough into four oblongs and roll it out. Make 4 - 5 circles that are 2 inch in diameter out of each oblong.

  3. Place compote on one half of a circle and fold over the other side. Brush with whole beaten egg Pinch the edges together. Set the turnovers aside in the refrigerator until they are well chilled.

  4. Meanwhile, prepare the citrus butter: reduce the orange and lemon juice with the confectioners' sugar and the grated orange zest; whisk the sauce, adding the butter, cut into pieces. Keep hot in a double boiler.

  5. Drop the turnovers into the hot cooking oil, a few at a time, and fry until golden on all sides.

  6. Drain the turnovers on paper towels and roll in the remaining sugar. Serve on a plate, encircled by citrus butter.
