Cheese Tart

Ingredients
Serves 6:

1 1/8 lb (500 g)
shortbread dough (refer recipe)

1 tbsp flour
-
3/4 oz (20g)
butter
-
2 oranges
-
3 tbsp sugar
-
1 1/8 lb (500 g)
mixed fruits, kiwi, mango, carambole, apple,
banana...ect.

7 1/4 oz (200g)
cottage cheese
-
2 sprigs of mint
Method:

Working on a floured countertop,
roll out the dough until it is 1/8-1/6 inch (3 -
4 mm) thick. Prick the bottom with a fork.
Refrigerate for 30 min.

Meanwhile, julienne the peel of
1/2 an orange. Blanche the peel for a few
minutes. Pour 3 1/3 fl oz (10 cl) of water and 1
tablespoon of sugar into a saucepan. Bring to a
boil. Add the julienne orange peel to this syrup
and cook for 20 min.

Preheat the oven to 460°F/240°C.

Cover the tart base with baking
paper and dried beans. Bake blind for 10 min.
Turn out on a cooling rack and let it cool.

Peel the fruits. Cut into thin
slices. Squeeze the oranges. In a bowl, mix the
orange juice, cottage cheese, remaining sugar,
and candied orange peel.

Arrange and smooth out the
mixture on the tart base. Arrange fruit slices
on the surface. Decorate with the mint sprigs.
