Cakes and Pastries Recipes - Fig and Raspberry Tart with Almond Cream Recipe

Ingredients

Serves 6:

  • 1 stick of prepared pie crust dough

  • 6 oz almond cream (refer recipe)

  • 1 1/2 lb ripe figs

  • 1 basket raspberries

  • 1 pinch ground cinnamon

  • 5 1/2 oz sugar


Method:

  1. Preheat the oven to 350°F/180°C. Roll out the dough and line a non-stick tart pan with it. Prick the dough with a fork. Bake blind for 10 min.

  2. Pour the almond cream into the tart crust.

  3. Wash and dry the figs. Cut and quarter them  vertically. Arrange them over the tart, pointing upwards, skin sides on the almond cream. Bake for 30 min.

  4. Take the tart out of the oven and let it cool. Sprinkle the raspberries over the figs. Mix the cinnamon and the sugar and dust the tart with this mixture.
