Ingredients
Serves 6
Almond paste:
-
6 1/4 oz flour
-
2 1/2 oz sugar
-
2 oz butter
-
2 tbsp almond
powder

1 egg
Almond cream:
Method:

Prepare the dough:
using your fingertips, combine the sugar and the
butter. Add the almond powder, flour and the
egg. Roll the dough into a ball. Roll out and
line a greased tart pan with it. Refrigerate for
30 minutes.

Halve the figs
lengthwise. Place them in a bowl, adding half
the sugar, the lemon juice, and the zest. leave
to soak for 1 hour.

Preheat the oven
to 350°F/180°C.

Prepare the almond
cream: beat the eggs in a bowl. Add the almond
powder, sugar, cream and milk. Pour the mixture
into the tart base. Bake for 10 minutes.

Take out of the
oven, drain the figs carefully and arrange
regularly on top of the tart. Put it back in the
oven, lowering the temperature to 320°F/160°C and
continue cooking for 20 minutes.
