Ingredients

Serves 4:

  • 1 carrot

  • 8 1/2 oz (250g) sugar

  • 9 dried apricots

  • 9 dates

  • 9 prunes

  • 1 tbsp currants

  • 10 oz (280g) shortbread dough (refer recipe)

  • 3/4 oz (20g) butter

  • 2 tbsp shaved almonds

  • 1 tbsp blanched pistachios

  • 1 tbsp sesame seeds


Method:

  1. Peel the carrot and blanche it for 30 seconds. Cut into thin slices. Set aside.

  2. Preheat the oven to 390°F/200°C.

  3. In a saucepan, bring to a boil 1 cup of water sweetened with the sugar. Take off the hunt and add the apricots, dates, prunes, raisins, and carrot slices. Cover and let it rest for about 10 min to allow the fruits to absorb the syrup.

  4. Roll out the dough. Cut out an 8 - 8 2/3 inch (20 - 22 cm) circle and line greased tart pan with it. Bake blind 10 -12 min.

  5. Meanwhile, dry roast the almonds. 6. Drain the fruit well. Arrange over the crust. Sprinkle with pistachios, sesame seeds and almonds.
