Ingredients

Serves 5

  • 8 1/2 oz (250g) puff pastry dough (refer recipe)

  • 3/4 oz butter

  • 1 coconut

  • 2 cups (50cl) milk

  • 2 tbsp flour

  • 2 oz (50g) sugar

  • 1 egg

  • 1 vanilla pod

  • Zest of 1 orange


Method:

  1. Preheat the oven to 350-390°F/180-200°C.

  2. Roll the dough until it is 1/8 inch (3 mm) thick and use it to line a greased pie pan. Bake for 15 minutes.

  3. Meanwhile, break open the coconut and grate the flesh. Set aside.

  4. Heat the milk over low heat. Mix in the flour, stirring well. Add the sugar, coconut, beaten egg, vanilla, and grated orange zest. Stir well. Simmer, stirring frequently, for 15 min, until the cream thickens.

  5. Take the pie crust out of the oven and increase the temperature to 460°F/240°C. Fill with the prepared cream. Bake for another 10 min. The filling should turn a golden brown color.
