Ingredients

Serves 6:

  • 3 oz glazing chocolate

Sweetened pastry dough:

  • 3 1/2 oz (100g) sugar

  • 2 egg yolks

  • 1 pinch salt

  • 1/2 vanilla pod

  • 7 1/4 oz (200g) sifted flour

  • 4 1/3 oz (125g) butter

  • 10 oz (280g) chocolate cream (refer recipe)


Method:

  1. Prepare the dough: place the sugar, yolks, and salt in a bowl. Add the vanilla seeds after removing them from the split vanilla pod. Beat this mixture with a spatula until it doubles in volume and turns frothy. Fold in the flour in one go. Mix first with a spatula, then with your fingertips, crumbling the dough into small pieces.

  2. Make a well in the center and place the butter, cut into small pieces, in it. Knead quickly without handling the pastry too long. Smooth out using your hands only. Cover the dough with a linen cloth and refrigerate 30 min. Preheat the oven to 390F/200C.

  3. Roll out the dough and line a 7-8 inch (18- 20 cm) tart pan with it. Cover the base with baking paper and dried beans. Bake until the edges are golden brown. Discard the paper and bean and continue cooking for another 5 min.

  4. Pour the chocolate cream into the crust and allow it to cool.

  5. Prepare the glazing: just before serving, heat the chocolate, broken into pieces, and cover the top of the tart with a uniform layer.
