with Cinnamon Cream

Ingredients
Serves 4:
Spicy ganache:
Chocolate glaze:

4 tbsp crème fraiche
-
1 tbsp sugar
-
2 oz (50g) chocolate
-
1/3 oz (10g) butter
Method:

Prepare the ganache: heat the cream, spices, and orange
zest. Allow it to steep, covered, for 20 min. Strain.
Heat the cream to just below the boiling point and pour
it little by little over the chocolate, broken into
pieces. Mix and stir in the butter. Set aside.

Prepare
the glaze: heat the crème fraiche and the sugar in a
saucepan. Place the chocolate, broken into pieces, in
this mixture. Mix well with a spatula and stir in the
butter. Set aside.

Preheat the oven to 350°F/180°C.

Roll out the dough and line a non-stick tart pan
with it. Spoon in dried beans and bake blind for 10 min.
Discard the beans. Bake for another 10 min.

Fill
the tart crust with the ganache, smooth it out with the
back of a spoon, and refrigerate for
30 min.

Coat the ganache with the chocolate glaze and smooth
it out. Dot the center with knobs of cinnamon cream.
Dust with cinnamon.
