Ingredients
Serves 4:

7 1/4 oz (200g) shortbread dough
(refer recipe)

3/4 oz (20g) butter
-
4 1/2 oz (130g) dark chocolate
-
5
eggs
-
1 cup (25 cl) cream
-
3 1/2 oz (100g) sugar
-
8 1/2 oz (250g) pink sugared
almonds
Method:
-
Preheat the oven to 390°F/200°C.
-
Roll out the dough to a thickness
of 118 inch (3 mm) and line greased tartlet tins
with it. Bake blind for 10 min.

Melt the chocolate over a double
boiler.
-
In another bowl, combine the
eggs, cream, sugar, and crushed sugared almonds.
Stir this mixture into the melted chocolate.
-
Lower the oven temperature to
300F/150C. Fill the tartlet bases with the
chocolate and sugared almond cream. Bake for
another 10 min.

Serve hot or cold.
