Ingredients

Serves 4:

  • 8 1/2 oz shortbread dough (refer recipe)

  • 1 oz butter

  • 8 1/2 oz dark chocolate

  • 1 cup cream

  • 3 1/2 oz orange marmalade


Method:

  1. °Preheat the oven to 350°F/180C.

  2. Roll out the dough and line 4 greased tartlet pans with it. Prick the tart bases with a fork. Cover with baking paper and fill with dried beans. Bake blind for 10 min.

  3. Meanwhile, break the chocolate into small pieces. Bring the cream and 3/4 oz (20g) of butter to a boil. Pour this mixture over the chocolate. Cool for about 5 min. Mix slowly.

  4. Take the tartlets out of the oven. Fill with orange marmalade and cover with chocolate. Cool before serving.
