Cream Tart

Serves 6:
Chocolate ganache
and chestnut cream:
Method:

Preheat the oven
to 350°F/180°C.

Roll out the dough
ad line a tart pan with it. Cover the base with
baking paper and dried beans. Bake blind for 15
minutes. Turn out and cool.

Prepare the
ganache: bring the cream to a boil. Drop the
chocolate, broken into small chunks, into the
cream. Stir. Fold 3/4 of this warm mixture into
the chestnut cream

Fill the tart
crust with the ganache. Refrigerate for at least
30 minutes.

Spread the
remaining ganache on the tart. Fashion the
surface of the tart into spikes, using a
spatula. Chill for another 15 minutes.

Before serving
dust with cocoa and confectioners' sugar.
