Ingredients

Serves 6:

  • 8 1/2 oz pie crust dough (refer recipe)

  • 1/2 oz butter

  • 1 cup cream

  • 2 oz sugar

  • 5 drops vanilla extract

  • 1 1/8 lb blackberries

  • 3 1/2 oz currant jelly

  • 1 tbsp kirsch


Method:

  1. Preheat the oven to 390°F/200°C.

  2. Roll out the dough. Line a greased tart pan with it. Prick the dough with a fork. Bake blind for about 20 minutes.

  3. Take the pan out of the oven and cool.

  4. Meanwhile, prepare the topping: whisk the cream in a bowl. Add the sugar and vanilla extract.

  5. Fill the tart crust wit this mixture. Arrange the blackberries on top in concentric circles.

  6. In a saucepan, heat the currant jelly, adding the kirsch over low heat. Cover the blackberries with this mixture and serve quickly.
