Cakes and Pastries Recipes - Banana Tartlets with Cinnamon and Rum Recipe

Ingredients

Serves 6:

  • 4 1/3 oz puff pastry dough (refer recipe)

  • 6 bananas

  • 3 1/2 oz brown sugar

  • 1 tbsp ground cinnamon

  • 5 fl oz old rum


Method:

  1. Preheat the oven to 350°F/180°C.

  2. Roll the dough to a thickness of 1/22 inch/2mm. Cut 6 tartlet bases from the dough shaped like bananas.

  3. Peel the bananas. Cut each banana into thin slices.

  4. Arrange each sliced banana on a tartlet base; the slices should overlap slightly. Dust with brown sugar and cinnamon.

  5. Place the tartlets on a baking sheet. Bake for 20 minutes.

  6. Take the tartlets out of the oven. Brush them with rum, using a pastry brush. Serve hot or cold.
