Ingredients
Serves 6:
Vanilla cream:

2 2/3 oz sugar
-
1 tbsp flour
-
1 egg yolk
-
4 fl oz (12 cl)
milk

1 pinch vanilla
seeds
-
3 tbsp cream
Shortbread dough:
Method:

Prepare
the vanilla cream: mix the sugar and the flour.
Combine with the egg yolk and mix well. Bring
the milk and vanilla seeds to a boil. Pour over
the preceding mixture, stirring all the time.
Pour this mixture into a saucepan. Bring to a
boil once again. Cool, stirring from time to
time. Fold in the whipped cream. Set aside and
chill.

Prepare
the dough: combine the flour, butter, sugar,
egg, and salt in a food processor, until the
dough no longer sticks to your fingers.

Preheat
the oven to 390°F/200°C.

Roll
out the dough with a rolling pin and line 6
greased tartlet pans with it. Prick the bases
with a fork. Bake blind for 10 - 12 min.

Meanwhile,
clean the fruit and cut it into pieces.

Take the crusts out of the oven
and cool. Pour the vanilla cream into the
crusts. Arrange the fruit over the cream. Dust
with confectioners' sugar.
