Cakes and Pastries Recipes - Apricot Almond Pie with Cream Recipe

Ingredients

Serves 4-5:

  • 7 1/4 oz puff pastry dough (refer recipe)

  • 1 tbsp flour

  • 7 1/4 oz apricots

  • 3/4 - 1 ozwhole blanched almonds

Almond cream:

  • 2 1/3 oz butter

  • 2 1/3 oz sugar

  • 2 1/3 oz almond powder

  • 1 small egg


Method:

  1. Preheat the oven to 330°F/170°C.

  2. Roll out the pastry on a floured countertop. Fold up the edges of the dough to form a crust. Place on baking sheet and bake blind for 10 min.

  3. Meanwhile, prepare the almond cream: cream the butter and add the sugar and almond powder. Stir well. Fold in the egg. Stir until the mixture is smooth.

  4. Take the baking sheet out of the oven without turning the oven off. Fill the shell with the prepared almond cream. Cover with halved apricots, skin side down, on the cream.

  5. Bake for 20 min. Decorate with the almonds.
