Ingredients

Serves 6:

  • 1 tbsp flour

  • 7 1/4 oz puff pastry dough (refer recipe)

  • 6 apples (Boskoop or Royal Gala)

  • Juice of 1 lemon

  • 3 oz (80g) crystal sugar

  • 1 packet vanilla sugar


Method:

  1. On a floured countertop, roll out the dough until it is about 1/8 inch (3 mm) thick.

  2. Line a pie pan with the dough. Prick the base. Chill for 15 min.

  3. Preheat the oven to 370°F/190°C.

  4. Peel the apples, discard the cores, and quarter the apples. Cut into slices and sprinkle with lemon juice. Arrange in concentric circles on the pie crust.

  5. Mix the 2 sugars and sprinkle them on the apples. Bake for 20 - 25 min. Serve with custard.
