Apple and Mango
Tart Tatin

Ingredients
Serves 4:
Method:

Core the apples with an apple corer, peel, and cut into
eighths.

Heat
3 1/3 oz of sugar, 1 1/2 oz (40g) of butter,
and the lemon juice in a frying pan over
high heat, not allowing the mixture to brown. Cook over
medium heat, uncovered, for 5 - 6 min. The fruit should
not become too soft.

Halve
the mangoes. Remove the seeds and peel. Cut the flesh
into large chunks.

Preheat the oven to 350°F/180°C.

Grease 4 pans, 4 inches (10cm) in diameter and about
1 1/3
inches (3 cm) deep, and dust with sugar. Arrange mango
slices in the centers and the apples around them.

Roll
out the dough thinly, cutting out 4 circles that are 4
inches (10 cm) in diameter. Cover each pan with a disc
of dough, folding in the sides.

Bake for 15 min. Lower
the temperature to 150C and continue cooking for 20
min.

Take the tartlets out
of the oven and allow to cool
for 10 min.

Turn out upside down on serving plates.
