Ingredients

Serves 6

  • 16 oz puff pastry dough (refer recipe)

  • 3 oz (80g) butter

  • 4 1/3 oz brown sugar

  • 2 oz currants

  • 2 eggs

  • 1 pinch salt

  • 6 apples


Method:

  1. Roll out the dough to a thickness of 1/12 an inch. Cut into 6 equal squares.

  2. Working on a plate, knead the butter together with the brown sugar and the currants, rinsed under running water. Divide the mixture into 6 equal portions.

  3. Preheat the oven to 410°F/210°C. Beat the eggs with the salt. Set aside.

  4. Core the apples with an apple corer, peel them, and place one in the center of each square of dough. Fill the apple centers with the butter-brown sugar mixture. Brush the dough with beaten egg and fold over the apples to cover them. Join the edges of the dumplings by pinching them together.

  5. Place the dumplings on a moistened baking sheet and brush with beaten egg. Bake for 40 min, lowering the temperature in the middle of the cooking time to 390°F/200°C. Cool and serve.
