Ingredients
Serves 8-10:

1 apple
-
1/3 oz candied
orange peel
-
1/3 oz (10g) candied
lemon peel
-
3 dried apricots
-
3 oz (80g) raisins
-
1 oz (30g) chopped
walnuts or almonds
-
2 oz creamed butter
-
2 oz (50g) brown sugar
-
1 pinch grated nutmeg
-
Juice and zest of
1/2 lemon
-
2 tbsp Cognac
-
14 oz (400 g) pie
crust dough (refer recipe)

1/2 oz (15g) butter
-
1 egg yolk
-
Cognac flavored butter
(refer recipe)
Method:
-
Peel and chop the apple. Chop the
candied citrus peel. Place in a bowl and mix
with the dried fruits, butter, brown sugar,
nutmeg, lemon juice and zest, and the cognac.
Soak for at least 12 h.

Preheat the oven to
410°F/210°C.

Divide the dough into two parts; one
should be twice as large as the other. Roll out the
larger piece as thinly as possible. Line a greased tart
pan with it. Cover with the filling.

Roll out the second
piece of dough. Place it over the tart, joining the
edges, which have been moistened with a little water.
Baste the tart surface with beaten egg yolk mixed with a
tablespoon of water.

Make an incision in the center to
allow the steam to escape during cooking. Bake for 15
-20min.

Cool. Serve with cognac flavored butter.
