Cakes and Pastries Recipes - Apple and Dried Fruits Tart Recipe

Ingredients

Serves 8-10:

  • 1 apple

  • 1/3 oz candied orange peel

  • 1/3 oz (10g) candied lemon peel

  • 3 dried apricots

  • 3 oz (80g) raisins

  • 1 oz (30g) chopped walnuts or almonds

  • 2 oz creamed butter

  • 2 oz (50g) brown sugar

  • 1 pinch grated nutmeg

  • Juice and zest of 1/2 lemon

  • 2 tbsp Cognac

  • 14 oz (400 g) pie crust dough (refer recipe)

  • 1/2 oz (15g) butter

  • 1 egg yolk

  • Cognac flavored butter (refer recipe)


Method:

  1. Peel and chop the apple. Chop the candied citrus peel. Place in a bowl and mix with the dried fruits, butter, brown sugar, nutmeg, lemon juice and zest, and the cognac. Soak for at least 12 h.

  2. Preheat the oven to 410°F/210°C.

  3. Divide the dough into two parts; one should be twice as large as the other. Roll out the larger piece as thinly as possible. Line a greased tart pan with it. Cover with the filling.

  4. Roll out the second piece of dough. Place it over the tart, joining the edges, which have been moistened with a little water. Baste the tart surface with beaten egg yolk mixed with a tablespoon of water.

  5. Make an incision in the center to allow the steam to escape during cooking. Bake for 15 -20min.

  6. Cool. Serve with cognac flavored butter.
