Ingredients

Serves 6:

  • 4 oz (110g) butter

  • 16 oz (450 g) shortbread dough (refer recipe)

  • 6 apples

  • 1 egg

  • 3 1/2 oz (100g) sugar

  • 3 1/2 oz (100g) grated coconut


Method:

  1. Preheat the oven to 410°F/210°C.

  2. Grease a tart pan. Roll out the dough and line the pan with it.

  3. Core the apples, then peel and cut them into quarters. Cook them, setting aside one quarter for decoration, and stew with a small amount of water until they soften.

  4. Spread the apple compote over the crust. Bake for 20 min.

  5. Meanwhile, melt the remaining butter over low heat. Beat a whole egg to a froth. Add the melted butter, sugar, and coconut. Mix well.

  6. Pour the mixture into the tart base. Lower the oven temperature to 350°F/180°C and continue cooking for 15 min until golden brown.

  7. Cut the reserved apple quarter into thin slices and arrange in a fan over the tart. Cool before turning out.
