Tea Cake Recipes - White Chocolate Tartlets Recipe

Ingredients

  • 1 3/4 cups/275 g all purpose/plain flour

  • 1/8 tsp salt

  • 1/2 cup/125 g butter, softened

  • 1/2 cup/100 g granulated sugar

  • 1 large egg yolk

  • 3 oz/90 g white chocolate, coarsely chopped


Method:

  1. Sift the flour and salt into a medium bowl. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy.

  2. Add  the egg yolk, beating until just blended. Mix in the dry ingredients. Cover with plastic wrap and refrigerate for 30 minutes.

  3. Preheat the oven to 350°F/180°C/gas 4. Set out three 12-cup mini muffin pans.

  4. Form the dough into balls the size of walnuts and press into the cups. Prick all over with a fork.

  5. Bake, one pan at a time, for 12-15 minutes, or until just golden. Transfer to racks to cool.

  6. Melt the white chocolate in a double boiler over barely simmering water. Fill each tartlet with the melted chocolate and serve.
