Tea Cake Recipes - Raspberry Almond Friands Recipe

Ingredients

  • 1/2 cup/75 g all purpose/plain flour

  • 1/8 tsp salt

  • 1 1/4 cups/180 g finely ground almonds

  • 3/4 cup/180 g butter, softened

  • 1 2/3 cups/250 g confectioners'/icing sugar

  • 6 large egg whites

  • 1/2 cup/125 g raspberries


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a 12-cup mini muffin pan. Sift the flour and salt into a large bowl.

  2. Stir in the almonds. Beat the butter and confectioners' sugar in a large bowl with an electric mixer at high speed until creamy.

  3. Mix in the dry ingredients and egg whites. Pour the batter evenly into the prepared cups and place a raspberry on top of each.

  4. Bake for 25-30 minutes, or until a toothpick inserted into the centers comes out clean. Transfer to racks to cool.
