Tea Cake Recipes - Plum Cakes Recipe

Ingredients

  • 8 oz/250 g firm ripe plums, halved and pitted

  • 1/2 cup/75 g all purpose/plain flour

  • 1 1/2 tsp finely grated nutmeg

  • 1/4 tsp ground cinnamon

  • 1/8 tsp salt

  • 1 1/4 cups/180 g finely ground almonds

  • 3/4 cup/180 g butter, softened

  • 1 2/3 cups/250 g confectioners'/icing sugar

  • 6 large egg whites


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a 12-cup mini muffin pan. Cut each half-plum into three.

  2. Sift the flour, nutmeg, cinnamon, and salt into a medium bowl. Stir in the almonds.

  3. Beat the butter and confectioners' sugar in a large bowl with an electric mixer at high speed until creamy.

  4. Mix in the dry ingredients and egg whites. Pour the batter evenly into the prepared cups and place a piece of plum on top of each.

  5. Bake for 25-30 minutes, or until a toothpick inserted into the centers comes out clean. Transfer to racks to cool.
