Tea Cake Recipes - Old-Fashioned Madeleines with Lavender Honey Recipe

Ingredients

  • 1/3 cup/50 g all purpose/plain flour

  • 1/8 tsp salt

  • 3 large eggs

  • grated zest of 1 lemon

  • 2 tbsp lavender honey

  • 1/2 cup/125 g butter, melted

  • confectioners'/icing sugar, to dust


Method:

  1. Preheat the oven to 425°F/220°C/gas 7. Butter two madeleine pans (for 20-24 madeleines).

  2. Sift the flour and salt into a large bowl. Beat the eggs and lemon zest in a large bowl with an electric mixer at high speed until pale and thick.

  3. Add the honey and beat until creamy. Fold in the dry ingredients, followed by the butter.

  4. Spoon the batter evenly into the prepared pans. Bake for 15-20 minutes, or until a toothpick inserted into one comes out clean.

  5. Cool the madeleines in the pans for 15 minutes. Transfer to racks to cool completely. Dust with the confectioners' sugar.
