Tea Cake Recipes - Nutmeg Madeleines Recipe

Ingredients

  • 1 cup/150 g all purpose/plain flour

  • 1 tsp ground cinnamon

  • 1/2 tsp baking powder

  • 1/4 tsp ground nutmeg

  • 1/8 tsp salt

  • 3 large eggs

  • 1 tsp vanilla extract/essence

  • 2/3 cup/170 g granulated sugar

  • 1/2 cup/125 g butter, melted

  • 1/3 cup/50 g confectioners'/icing sugar


Method:

  1. Sift the flour, cinnamon, baking powder, nutmeg, and salt into a medium bowl.

  2. Beat the eggs and vanilla in a large bowl with an electric mixer at high speed for 3 minutes.

  3. Gradually add the granulated sugar, beating until the batter falls off the beater in ribbons.

  4. Fold in the dry ingredients and butter. Refrigerate for 30 minutes. Let rest at room temperature for 15 minutes.

  5. Preheat the oven to 375°F/190°C/gas 5. Butter two madeleine pans (for 20-24 madeleines). Spoon the batter into the prepared pans.

  6. Bake for 10-12 minutes, or until brown and springy to the touch. Cool the madeleines in the pans for 15 minutes.

  7. Transfer to racks and let cool. Dust with the confectioners' sugar.
