Tea Cake Recipes - Lemon Raisin Rock Cakes Recipe

Ingredients

  • 1 1/2 cups/225 ml all-purpose/plain flour

  • 6 tbsp butter, melted

  • 1 tbsp grated lemon zest

  • 2 tsp baking powder

  • 1 large egg, lightly beaten

  • 1/3 cup/70 g granulated sugar

  • 2 tbsp fresh lemon juice

  • 2/3 cup/120 g raisins

  • 2 tbsp raw or coarse sugar


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Butter a baking sheet.

  2. Beat the flour, butter, lemon zest, and baking powder in a large bowl with an electric mixer at medium speed until well blended.

  3. Add the egg, sugar, lemon juice, and raisins. Drop heaping tablespoons of the batter onto the prepared sheet, spacing them 2 inches (5 cm) apart.

  4. Sprinkle with the sugar. Bake for 15-20 minutes, or until golden brown. Cool the cakes on racks.
