Ingredients
VANILLA
PASTRY CREAM:

8 large egg yolks
-
1/2 cup/125 g sugar
-
3/4 cup/125
g all purpose/plain flour
-
1 quart/1 liter boiling milk
-
1 tsp vanilla extract/essence
Method:
-
Preheat the oven
to 325°F/170°C/gas 3. Butter 2-3 baking sheets. Beat the eggs and sugar in a large bowl until pale
and thick.

Fold in the lemon zest, and flour, alternating with the Sambuca and milk.

Make a fairly
soft dough and shape into balls the size of walnuts.
Place on the prepared sheets, 1 inch (2 cm) apart.

Bake for 8-10
minutes, or until lightly browned. Cool on a rack.

Vanilla Pastry Cream: Beat the egg
yolks and sugar until pale and creamy.

Stir in the
flour, then gradually add the milk and vanilla. Cook
over medium heat until thick. Let cool.

Poke a
hole in the flat bottom of each one to make room for
the filling. Let cool completely.

Brush with a
little milk and fill with the cream, sticking them
together in pairs. Dip in the liqueur to color.
Roll in the sugar.
