Tea Cake Recipes - Italian Pastry Cream Kisses Recipe

Ingredients

  • 6 large eggs

  • 4 cups/800 g sugar

  • 2 cups/500 ml milk

  • Grated zest of 1 lemon

  • 1 cup/250 ml Sambuca

  • 3 lb/1.5 kg flour, or more as needed

  • 1 cup/250 ml Alchermes liqueur

  • raw sugar, to roll

VANILLA PASTRY CREAM:

  • 8 large egg yolks

  • 1/2 cup/125 g sugar

  • 3/4 cup/125 g all purpose/plain flour

  • 1 quart/1 liter boiling milk

  • 1 tsp vanilla extract/essence


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Butter 2-3 baking sheets. Beat the eggs and sugar in a large bowl until pale and thick.

  2. Fold in the lemon zest, and flour, alternating with the Sambuca and milk.

  3. Make a fairly soft dough and shape into balls the size of walnuts. Place on the prepared sheets, 1 inch (2 cm) apart.

  4. Bake for 8-10 minutes, or until lightly browned. Cool on a rack.

  5. Vanilla Pastry Cream: Beat the egg yolks and sugar until pale and creamy.

  6. Stir in the flour, then gradually add the milk and vanilla. Cook over medium heat until thick. Let cool.

  7. Poke a hole in the flat bottom of each one to make room for the filling. Let cool completely.

  8. Brush with a little milk and fill with the cream, sticking them together in pairs. Dip in the liqueur to color. Roll in the sugar.
