Tea Cake Recipes - Busy Madeleines Recipe

Ingredients

  • 1/2 cup/75 g all purpose/plain flour

  • 1 2/3 cups/250 g confectioners'/icing sugar

  • 1/8 tsp salt

  • 1/2 cup/75 g finely ground hazelnuts

  • 4 large egg whites

  • 3/4 cup/180 g butter, melted

  • 1 container (8 oz/ 250 ml) chocolate hazelnut spread (Nutella), softened


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Butter two madeleine pans (for 20-24 madeleines).

  2. Sift the flour, confectioners' sugar, and salt into a large bowl. Stir in the hazelnuts.

  3. Beat the egg whites in a large bowl with an electric mixer at high speed until stiff peaks form.

  4. Fold in the dry ingredients, followed by the butter and chocolate hazelnut spread.

  5. Spoon the batter evenly into the prepared pan. Bake for 12-15 minutes, or until a toothpick inserted into one comes out clean.

  6. Cool the madeleines in the pans for 15 minutes. Transfer to racks and let cool completely.
