Tea Cake Recipes - Blueberry Almond Friands Recipe

Ingredients

  • 1/2 cup/75 g all purpose/plain flour

  • 1/8 tsp salt

  • 1 1/4 cups/180 g finely ground almonds

  • 3/4 cup/180 g butter, softened

  • 1 2/3 cups/250 g confectioners'/icing sugar

  • 6 large egg whites

  • 1/2 cup/125 g blueberries


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a 12-cup mini muffin pan.

  2. Sift the flour and salt into a medium bowl. Stir in the almonds.

  3. Beat the butter and confectioners' sugar in a large bowl with an electric mixer at high speed until creamy.

  4. Mix in the dry ingredients and egg whites. Pour the batter evenly into the prepared cups and place some blueberries on top of each.

  5. Bake for 25-30 minutes, or until a toothpick inserted into one comes out clean. Transfer to racks to cool.
