Sugar Cookie Recipes - Zesty Refrigerator Cookies Recipe
Ingredients
3 cups/450
g all-purpose/plain flour
1 tsp
baking powder
1/2 tsp
baking soda
1/2 tsp salt
1 cup/250 g
butter, softened
3/4 cup/150 g
granulated sugar
2/3 cup/140
g firmly
packed light brown sugar
2 tbsp vanilla sugar
2 large eggs, lightly beaten
1 tsp
vanilla extract/essence
1 tsp
finely grated lemon zest
1 tsp fresh
lemon Juice
2 tbsp milk
or more asneeded
Method:
Sift the flour,
baking powder, baking soda, and salt into a medium
bowl.
Beat the butter, granulated sugar, brown
sugar, and vanilla sugar in a large bowl with an
electric mixer at high speed until creamy.
Add the
eggs, beating until just blended. Stir in the
vanilla and lemon zest and juice. Mix in the dry
ingredients until well blended.
Add enough milk to
form a soft, but not sticky dough. Turn the cookie
dough onto a lightly floured surface and knead until
smooth.
Divide the dough in half. Form each half
into a 12-inch (30-cm) log, wrap in plastic wrap,
and refrigerate for 30 minutes.
Preheat the oven
to 400°F/200°C/gas 6. Butter two cookie sheets. Slice the dough 1/4 inch (5 mm) thick and place 1
inch (2.5 cm) apart on the prepared cookie sheets.
Bake for 6-8 minutes, or until lightly browned and
firm around the edges. Transfer to racks to cool.
