Ingredients
2 1/3 cups/350
g all-purpose/plain flour
1 tsp
baking powder
1 tsp
ground cinnamon
1/8 tsp salt
6 tbsp butter, softened
1/2 cup/100
g granulated
sugar
2 large eggs
1/2 tsp vanilla extract/essence
1/2 cup/160
g strawberry preserves
Method:
Preheat the oven
to 400°F/200°C/gas 6. Butter three cookie sheets.
Sift the flour, baking powder, cinnamon, and salt
into a medium bowl.
Beat the butter and sugar in a
large bowl with an electric mixer at high speed
until creamy. Add the eggs and vanilla, beating
until just blended.
Mix in the dry ingredients. Fit the pastry bag with a 1/2-inch (1-cm) plain tip.
Fill the pastry bag, twist the opening tightly
closed, and squeeze out 2-inch (5-cm) rounds, spacing
1 inch (2.5 cm) apart on the prepared cookie sheets.
Press your thumb into each cookie to make a small
hollow. Bake, one sheet at a time, for 8-10
minutes, or until just golden. Transfer to racks
to cool.
Heat the preserves in a small saucepan
over low heat until liquid. Fill each hollow with
a little preserves and let stand for 20 minutes
until set.
