Sugar Cookie Recipes - Strawberry Cinnamon Crisps Cookies Recipe

Ingredients

  • 2 1/3 cups/350 g all-purpose/plain flour

  • 1 tsp baking powder

  • 1 tsp ground cinnamon

  • 1/8 tsp salt

  • 6 tbsp butter, softened

  • 1/2 cup/100 g granulated sugar

  • 2 large eggs

  • 1/2 tsp vanilla extract/essence

  • 1/2 cup/160 g strawberry preserves


Method:

  1. Preheat the oven to 400°F/200°C/gas 6. Butter three cookie sheets. Sift the flour, baking powder, cinnamon, and salt into a medium bowl.

  2. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy. Add the eggs and vanilla, beating until just blended.

  3. Mix in the dry ingredients. Fit the pastry bag with a 1/2-inch (1-cm) plain tip.

  4. Fill the pastry bag, twist the opening tightly closed, and squeeze out 2-inch (5-cm) rounds, spacing 1 inch (2.5 cm) apart on the prepared cookie sheets.

  5. Press your thumb into each cookie to make a small hollow. Bake, one sheet at a time, for 8-10 minutes, or until just golden. Transfer to racks to cool.

  6. Heat the preserves in a small saucepan over low heat until liquid. Fill each hollow with a little preserves and let stand for 20 minutes until set.
