Sugar Cookie Recipes - Sherry Caraway Crisps Cookies Recipe

Ingredients

  • 1/2 cup/125 g butter, cut up

  • 1 tbsp half-and-half

  • 1 2/3 cups/250 g all-purpose/plain flour

  • 2/3 cup/140 g granulated sugar

  • 1 1/2 tsp caraway seeds

  • 1/2 tsp freshly

  • grated nutmeg

  • 1/8 tsp salt

  • 1 large egg yolk

  • 1 tbsp sweet sherry


Method:

  1. Melt the butler with the cream in a small saucepan over low heat. Transfer to a large bowl.

  2. Mix in the flour, sugar, caraway seeds, nutmeg, and salt. Beat the egg yolk and sherry in a small bowl until frothy.

  3. Stir the egg mixture into the dry ingredients to form a stiff dough. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 1 hour.

  4. Preheat the oven to 325°F/170°C/gas 3. Butter two cookie sheets. Roll out the dough on a lightly floured surface to a thickness of 1/4 inch (5 mm).

  5. Use a 2-inch (5­cm) cookie cutter to cut out the cookies. Gather the dough scraps, re-roll, and continue cutting out cookies until all the dough is used.

  6. Use a spatula to transfer the cookies to the cookie sheets, placing them 1 inch (2.5 cm) apart. Bake for 10-15 minutes, or until just golden. Transfer to racks to cool.
