Ingredients

• 1 3/4 cups/275 g all purpose/plain flour

• 1/3 cup/50 g rice flour

• 1 1/4 tsp baking powder

• 1/8 tsp salt

• 4 tbsp butter, softened

• 3/4 cup/150 g granulated sugar

• 1 large egg

• 1 tbsp finely grated lemon zest

Method:

1. Preheat the oven to 375°F/190°C/gas 5. Butter two cookie sheets.

2. Sift the all-purpose and rice flours, baking powder, and salt into a medium bowl.

3. Beat the butter and sugar in a large bowl with an electric mixer until creamy.

4. Add the egg and lemon zest, beating until just blended. Mix in the dry ingredients.

5. Drop tablespoons of the dough 1 inch (2.5 cm) apart onto the prepared cookie sheets.

6. Bake for 8-10 minutes, or until pale golden. Transfer to racks to cool.
