Party Cookie Recipes - Spiced Crisps Recipe

Ingredients

  • 2 cups/300 g all purpose/plain flour

  • 2 tbsp ground cinnamon

  • 2 tsp ground cloves

  • 1 1/2 tsp ground ginger

  • 1 tsp baking powder

  • 1/4 tsp salt 

  • 2/3 cup/150 g butter, cut up

  • 2/3 cup/140 g granulated sugar

  • 1/2 cup/125 ml light corn syrup/golden syrup

  • 1/3 cup/30 g coarsely chopped almonds

  • 1 tbsp finely grated lemon zest

  • 1 tbsp finely chopped mixed candied peel

  • 1 tbsp flaked almonds


Method:

  1. Sift the flour, cinnamon, cloves, ginger, and baking powder into a large bowl.

  2. Melt the butter with the sugar and corn syrup in a medium saucepan. Let cool for 10 minutes.

  3. Stir in the almonds, lemon zest, and candied peel. Mix in the dry ingredients. Refrigerate for 1 hour, or until firm.

  4. Preheat the oven to 375°F/190°C/gas 5. Butter two cookie sheets. Roll out the dough to a thickness of 1/4 inch (5 mm).

  5. Use a 2-inch (5-cm) cookie cutter to cut out the cookies. Continue cutting out cookies until all the dough is used.

  6. Transfer the cookies to the prepared cookie sheets, placing them 1 inch (2.5 cm) apart. Place a flaked almond piece on top of each cookie.

  7. Bake for 8-10 minutes, or until just golden. Transfer to racks to cool.
