Party Cookie Recipes - Soft Pecan Wedding Cakes Recipe
Ingredients
1 cup/250 g butter, softened
1 3/4 cups/275 g confectioners'/icing sugar
2 1/2 cups/425 g all purpose/plain flour
1 tsp vanilla extract/essence
1 tsp almond extract/essence
1 cup/100 g finely chopped pecans
Method:
Beat the butter
and 3/4 cup (125 g) confectioners' sugar in a large
bowl with an electric mixer at high speed until
creamy.
Mix in the flour, vanilla and almond
extracts, and pecans. Refrigerate for 30 minutes.
Preheat the oven to 350°F/180°C/gas 4. Butter
three cookie sheets.
Form the dough into balls the
size of walnuts and place 2 inches (5 cm) apart on
the prepared cookie sheets. Use the bottom of a
glass to flatten them slightly.
Bake, one sheet at
a time, for 12-15 minutes, or until lightly browned.
Transfer to racks and let cool completely.
Roll
in the remaining confectioners' sugar until well
coated.
