Party Cookie Recipes - Soft Pecan Wedding Cakes Recipe

Ingredients

  • 1 cup/250 g butter, softened

  • 1 3/4 cups/275 g confectioners'/icing sugar

  • 2 1/2 cups/425 g all purpose/plain flour

  • 1 tsp vanilla extract/essence

  • 1 tsp almond extract/essence

  • 1 cup/100 g finely chopped pecans


Method:

  1. Beat the butter and 3/4 cup (125 g) confectioners' sugar in a large bowl with an electric mixer at high speed until creamy.

  2. Mix in the flour, vanilla and almond extracts, and pecans. Refrigerate for 30 minutes.

  3. Preheat the oven to  350°F/180°C/gas 4. Butter three cookie sheets.

  4. Form the dough into balls the size of walnuts and place 2 inches (5 cm) apart on the prepared cookie sheets. Use the bottom of a glass to flatten them slightly.

  5. Bake, one sheet at a time, for 12-15 minutes, or until lightly browned. Transfer to racks and let cool completely.

  6. Roll in the remaining confectioners' sugar until well coated.
