Preheat the oven
to 350°F/180°C/gas 4. Set out two cookie sheets. Sift the flour and salt into a large bowl.

Beat
the confectioners' sugar and butter in a large bowl
with an electric mixer at high speed until creamy.

Add the egg and peppermint and vanilla extracts,
beating until just blended. Mix in the dry
ingredients.

Divide the dough between two bowls. Mix the crushed candy into one bowl and the food
coloring into the other bowl until well blended.

Form tablespoons of the candy dough into 4-inch
(10-cm) ropes. Repeat with the colored dough.

Twist one candy dough rope and one colored dough
rope together to form a striped rope.

Shape one
end of the rope into a curve to resemble a candy
cane and place 2 inches (5 cm) apart on the prepared
cookie sheets.

Bake for 10-12 minutes, or until
firm to the touch. Transfer to racks to cool.
